I am pretty sure my Maverick thermometer is on crack. It reads much lower than my thermocouples, yet they both measure 212 in boiling water. I'm gonna need to keep testing this.
One thing for sure, my cooks with the new setup take longer than they did using the Maverick. I'm guessing because the Maverick reads so low I was actually cooking much hotter.
Note that there is still a good bit of noise in the thermocouples...I think I have some spikes from the power supply when the fan kicks on and off. I will work on a way to filter this for the next cook.
You can sure see where the sun came out on my ambient probe around 11:00. I moved it to the shade and things got normal again.
